Brief purpose of the study: | The overall objective of this study is to investigate the benefits of consuming lean beef (grass-fed beef compared to grain-fed beef) versus control (plant-based meat) for six weeks on cardiometabolic health in healthy adults. In addition, the study will examine how changes in gut microbiome are associated with cardiometabolic profile. |
Brief summary of what participants will be asked to do: | Study design:
1-hour screening visit at MU
Two 3-hour and one 1-hour research visits at MU
Study foods (cooked meat portions) provided
Total compensation: $200
Individual study measurements
Anthropometrics: weight, adiposity, etc.
Blood and stool collections
Cardiovascular tests
Sensory tests
Diet and sleep records
Appetite and palatability ratings
Physical activity
Attention and memory tests |
Basic eligibility criteria: | Inclusion criteria include:
Age: 18-45 years of age
Weight status: Normal, overweight, or mildly obese (BMI: 18-35 kg/m2)
Willingness to consume study foods and comply with study protocol
Consistent diet and activity patterns for 4 weeks
Weight stable (≤5 kg change over the last 3 months)
Non-smoker >1 year or more
No allergies to study foods
Not pregnant or lactating
No recent consumption of antibiotics or probiotics
Non-regular consumers of red meat or plant-based meat (≤3 times/week)
