Brief purpose of the study: | The purpose of this research study is to find out whether and how too much protein in the diet can cause atherosclerosis (fatty plaque build-up in blood vessels) and whether different types of proteins, like those from animal-derived foods (such as meats and dairy) versus those from plants, have different effects on the factors that cause atherosclerosis. |
Brief summary of what participants will be asked to do: | You are being asked to commit to a screening visit and four study visits at University Hospital in Columbia, MO. The screening visit lasts about half a day. The other study visits last about 20 hours each and include an overnight stay in the Clinical & Translational Science Unit (CTSU) at University Hospital. During your participation in the study, you will eat specific study meals and have several blood samples drawn. |
Basic eligibility criteria: | Man or woman aged 45-75 years old |
