Brief purpose of the study: | The purpose of this research study is to compare the metabolic effects of high-protein diets in which the increased protein intake is derived from different sources (animal protein isolates, plant protein isolates, animal-derived protein-rich whole foods, or plant-derived protein-rich whole foods). |
Brief summary of what participants will be asked to do: | As a voluntary participant, you will be asked to commit to up to 21 study visits varying in length from less than 1 hour to ~40 hours at the Clinical & Translational Science Unit at University Hospital (Columbia, MO). During your participation in the study, you will be asked to follow a specific diet (chef-prepared frozen meals provided), complete tests measuring blood sugar responses to meals and insulin, undergo multiple fat and muscle biopsies and vascular function testing. |
Basic eligibility criteria: | Woman or man between 21 and 70 years old and habitually consume a mixed animal and plant food diet. |
